Last Names: Is there a common name ending in Spanish Speaking countries? As "Petersen" or "Larson" to North Germanic languages or "O'Donnell" or "MacDonald" to Gaelic Languages. I know there is -Ez but is there like a "Smith" last name that is amazingly common?

I think the answer will vary from country to country. In Mexico, the most common ones are:
Pérez, Sánchez, Rodríguez, González and López.
As far as I know the -ez ending was used as "son of":
Martínez = son of Martín.
Ramírez = son of Ramiro.
